Lemon Herb Stuffing for Roast Chicken

Ingredients

  • 75g butter
  • 1 onion, finely chopped
  • 2 celery stalks, finely chopped
  • 100g chopped bacon
  • 150g fresh white breadcrumbs
  • 1 handful fresh parsley, finely chopped
  • grated zest of 1 lemon
  • 1/2 tsp dried marjoram
  • salt, black pepper

Cooking instructions

Melt the butter over a low heat, add the onions, celery and bacon and cook gently, stirring occasionally until the onion is very soft, about 10 minutes. Stir in the crumbs, parsley, lemon and marjoram and add salt and pepper to taste. Allow the stuffing to cool completely before filling the chicken.
